Roasted Carrots

Oh boy my din din tonight is super colorful! I had a pot roast made and picked up this gorgeous bag of multi-colored carrots from TraderJoes! They are sweet and delicious! I peeled and trimmed them, tossed in grape seed oil and seasoned with smoked salt and black pepper! Roasted these babies at 400F for 35 minutes! So delicious!
