If you're a fan of smoked meats like I am, then you must prepare this little recipe that will having you not missing the smoker at all. No smoker required, but like most smoked foods, it will take a little time in your slow cooker! The candied "bark" that's created by the cola and the barbecue sauce together is simply delicious! You'll be picking at it long before you serve it!
Now the recipe calls for a can of cola. It really doesn't matter which one you choose because quite frankly, they all work! I've been asked if you can use even a sugar-free version and the answer is yes. You are the kings and queens of your kitchen so I say, "make it so!" Whatever you do, give this little recipe the time to work it's low and slow magic. Don't stir it or agitate it too much while it's cooking. It's really not necessary. You want that delicious candied "bark" to manifest and with a little patience, the deliciousness will be your reward. So onto the recipe!
Ingredients
- 1 T. salt
- 1 T. black pepper
- 2 t. crushed red pepper flakes
- 3-4 lb pork tenderloin
- 12 oz cola, cherry cola, root beer or Dr. Pepper
- 18 oz barbecue sauce
Instructions
Mix together spices in a small bowl. Rub spices on the top and sides of the tenderloin.
Place pork in a crock pot. Using a basting brush, coat the outside of the tenderloin with barbecue sauce. Pour the cola into the crock pot, careful not to touch much of the sauced pork. Place lid onto the crock-pot and cook on low for 5-7 hours. Shred with a fork for serving. Serve with extra barbecue sauce if desired! Enjoy!
