Broiled Tomato Bliss

If there was a side accompaniment that my family requests at holidays, get togethers, you name it, it is this! These broiled tomatoes are unlike any other you've ever had, I promise! It's the combination of the cheese along with the mayonnaise that makes for such a rich and appealing dish!

Now, if you're not a fan of mayonnaise, and I know many of you aren't, trust me when I say you can not taste it! It's the binder that just simply carries the flavor of the cheeses, oregano, and garlic. They are melty good and go perfect with steak, roasts, ham, you name it! It's making my mouth water as I write this to share with you! Try them and let me know your results!

Ingredients

  • 1/2 cup grated Parmesan cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/2 cup mayonnaise
  • 1 T. dried oregano
  • 1 t. salt
  • 1 t. garlic, minced
  • 2 large tomatoes

Instructions

In a small bowl, combine the first seven ingredients. Cut each tomato into four slices. Place the tomatoes onto an ungreased baking pan. Spread each sliced with an equal portion of the cheese mixture, using up all the cheese. Using an ice-cream scoop makes this easy. Broil the tomatoes in the oven for 3-5 minutes or until cheese mixture starts to turn golden brown to your liking. Serve immediately.
