CRAFTSMANSHIP: “the quality of design and work shown in something made by hand; artistry”.

It’s easy to see why this plate is so “easy on the eyes”. Where I’m not a huge fan of dark, heavy, compositions, this plate is well executed with quality work. It’s easy to see the chef put a tremendous amount of mindful thought into the creation of this course. Shapes, relational sizes of components, they “jive”.

Competition and plate design is an opportunity to ask yourself, what skills can I learn from other professions?

  • Engineering
  • Architecture
  • Interior designers
  • Contractors
  • Artists of all kinds (painters, sculptors, wood workers)

They all use guiding principles in design. The same applies to food, plates, and culinary composition.

The next time you open a beautiful home decor magazine, notice the spacial relationships of the furniture, the artwork, the balance of the room. Take that knowledge and apply it to the components and design of your plates.
